Simplicity is a multi-functional dairy ingredient made from whey protein concentrate used as a fat substitute in low-calorie foods. Originally brought to market in 1988, the manufacturer, CP Kelco (to form NutraSweet subsidiary), sells a microparticulated whey protein concentrate in a dry powder form, and recommends that it be labeled as a dairy protein on food labels. Caprenin is a fat substitute designed for lowering the caloric content of food. Structurally, it resembles normal fat food, being made up of glycerol and fatty acids (behenic, capric, and caprylic acids).
